The Enterprise-C only appeared in one episode, 'Yesterday's Enterprise', when we learned that it was one of the most important ships in history. It was destroyed defending a Klingon colony against a Romulan attack, convincing the Klingons that Starfleet was honorable. The ship was designed by Rick Sternbach who wanted to make it look like a more advanced version of Kirk's ship.
